Do we need to bother with buying components for mods, or just pay the cost? Not urgent :)

Just pay the costs. It's assumed that you either have the parts already, or that you pick it up along with your groceries. :D

How many actions/maneuvers and what rolls would it be to go from a standing start to activating your jetpack, swoop ining, grabbing a hostage, and flying off? Asking for a friend :D

Official Jetpack rules are [Collapse of the Republic pg.59]:
Using Jetpacks
A character using a jetpack operates as a vehicle, which means they require some special considerations during an encounter. As described in Chapter VII in any core rulebook, all personal-scale range bads fall within the Close range band of planetary scale. Therefore, a character using a jetpack can perform the fly/drive maneuver to move any number of personal-scale range bands and avoid most obstacles and terrain while doing so. It is more important to track the character's location in personal scale.

If a character using a jetpack does not perform any maneuvers to move, that does not mean they are staying still. They may be hovering in pace, flying in a circle, or otherwise maintaining their relative distance to other characters. How the player narrates this may have additional narrative effects on the scene and relevant skill checks.

It's also important to remember that a character using a jetpack must perform a maneuver to accelerate or decelerate in order to take off or land safely.
So from what I understand, it will go something like this:

Step 1: Maneuver to accelerate.
Step 2: Maneuver to Fly (can move any Personal-scale Range band).
Step 3: Action to grab.

I think I'll add on a Piloting check to cover successfully navigating and grabbing the hostage. (One roll for both of those things, not two separate ones)

2 Threat: A tiny tip to some fellow holonet hacker was required to get the information (pay 20 credits)

Baron Terrance Elucia Longwhisker

He does seem to be a real Baron. He's been on Port Nowhere for some time. He seems to pretty much just be on extended vacation. He hangs around, he eats and drinks, he has a room at the hotel.

You manage to pick a record of a brief communication that leads you to off-station security forces. It seems that he's got a warrant for his arrest issued by Alderaan. They know he's on Port Nowhere, but haven't come in after him; probably not worth the effort. They still do seem to passively be keeping an eye on him, though.

Average difficulty, materials cost 100 credits, generally same dice rules as modding.

Does opening the crate count as a lock for purposes of my equipment (cyberjack/lockbreaker hand)?
